½ cup hot water
Instructions:

Mix dry ingredients:
In a large bowl, whisk together the flour, salt, and baking powder (if using).

Add fat and water:
Put in the ghee (or melted butter) and mix until the flour looks crumbly. Slowly add the warm water, mixing with dough hook or a spoon or your hands until a dough forms.

Knead the dough:
Transfer the dough to a lightly floured surface and knead for about 10 min with dough or 5 minutes with hands until smooth and elastic.

Rest the dough:
Cover the dough with a clean kitchen towel and let it rest for 15–30 minutes. This helps make the tortillas easier to roll out. -
Divide and roll out:

Divide the dough into 8 equal pieces and roll each into a ball.

On a lightly floured surface, use a rolling pin to roll each ball into a thin circle (about 6–8 inches in diameter).

Cook the tortillas:

Heat a dry skillet or griddle over low heat.

Place one tortilla on the pan and cook for about 30–60 seconds, until bubbles form.

Flip and cook the other side for another 30 seconds.

Keep warm and serve:
Stack the cooked tortillas and cover them with a clean towel to keep them warm. Serve fresh with tacos, burritos, or wraps!
